Ingredients

  • 1 medium onion, chopped
  • 2 to 3 tsp. butter
  • 1 can each: condensed cream of chicken soup and cream of mushroom soup
  • 1 c. chicken broth
  • 1 small can green chilies, chopped
  • 1 chicken (2 to 3 lb.), cooked and boned
  • 1 pkg. (10) corn tortillas
  • 1 lb. Longhorn cheese, grated

Method

  • Slightly brown onions in butter.
  • Combine with soups and broth. Add pieces of chicken.
  • Mix well.
  • Grease a large baking dish.
  • In baking dish, place layer of tortillas, then layer of chicken mixture, then layer of grated cheese.
  • Repeat layers until casserole is filled with cheese on top.
  • Bake at 350° for 30 minutes.
  • Makes 8 servings.
