Ingredients

  • 2 large boneless, skinless chicken breasts; cut into bite sized pieces
  • 10 to 12 ounces sliced mushrooms
  • 1 small onion, diced
  • 3 clove garlic, minced
  • 3/4 cup Marsala cooking wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 lb dry pasta + water for cooking (I used penne, rigatoni is also good)
  • 1 cup Parmesan cheese + more for serving
  • 5 tbsp unsalted butter
  • 1 salt and pepper to taste
  • 1 minced, chopped fresh parsley for garnish

Method

  • Makes: 4-6 servings
  • *I made a topping out of the chopped parsley by mixing : 1 tbs of olive oil, 1 chopped roma tomato, 2 fresh minced garlic cloves, & less than 1/4 cup of chopped parsley.
