Ingredients

  • 2/3 cup sugar
  • 2 1/3 cup pink grapefruit juice
  • 1/2 teaspoon grated grapefruit rind
  • 2 cups champagne, chilled

Method

  • Combine sugar & grapefruit juice in a medium saucepan; bring to a boil, stirring constantly. Cover, reduce heat, and simmer 5 minutes. Let cool.
  • Combine grapefruit misxture, grapefruit rind, and cchampagne; pour into a 13x9x2 inch pan. Freeze until almost firm. Spoon muxture into a bowl, and beat at medium speed with an electric mixer, until slushy.
  • Return to pan Freeze 8 hours. Spoon into glasses & serve.
