Ingredients

  • 1 1/4 c. chicken broth
  • 1 can stewed tomatoes, cut up
  • 2 cloves garlic, minced
  • 1 1/2 tsp. dried basil leaves, crushed
  • 3/4 c. regular long grain rice, uncooked
  • 10 oz. chicken, undrained
  • 1 c. frozen peas
  • 1/4 tsp. hot pepper sauce

Method

  • In saucepan, heat broth, tomatoes, garlic and basil to boiling.
  • Add rice.
  • Reduce heat to low.
  • Cover; simmer 20 minutes. Add undrained chicken, peas and hot pepper sauce.
  • Cover; simmer 5 minutes, stirring occasionally.
  • Remove from heat.
  • Let stand, covered, 5 minutes.
  • Serves 4.
