Ingredients
- 1 1/4 c. chicken broth
- 1 can stewed tomatoes, cut up
- 2 cloves garlic, minced
- 1 1/2 tsp. dried basil leaves, crushed
- 3/4 c. regular long grain rice, uncooked
- 10 oz. chicken, undrained
- 1 c. frozen peas
- 1/4 tsp. hot pepper sauce
Method
- In saucepan, heat broth, tomatoes, garlic and basil to boiling.
- Add rice.
- Reduce heat to low.
- Cover; simmer 20 minutes. Add undrained chicken, peas and hot pepper sauce.
- Cover; simmer 5 minutes, stirring occasionally.
- Remove from heat.
- Let stand, covered, 5 minutes.
- Serves 4.
