Ingredients

  • 2/3 c. uncooked rice
  • 1/2 teaspoon salt
  • 2/3 c. sugar
  • 3 tbsp. cornstarch
  • 3 c. lowfat milk
  • 3 egg yolks, beaten slightly
  • 1 teaspoon vanilla
  • 3 egg whites
  • 2 tbsp. sugar

Method

  • Boil rice till tender.
  • In a large pan, add in sugar, salt, cornstarch, lowfat milk, egg, and vanilla.
  • Add in boiled rice to lowfat milk mix and boil till thick, stirring well.
  • Put in casserole, put on meringue and bake 15 min in a 350 degree oven.
  • For meringue, beat egg whites till stiff with sugar.
