Ingredients
- 2/3 c. uncooked rice
- 1/2 teaspoon salt
- 2/3 c. sugar
- 3 tbsp. cornstarch
- 3 c. lowfat milk
- 3 egg yolks, beaten slightly
- 1 teaspoon vanilla
- 3 egg whites
- 2 tbsp. sugar
Method
- Boil rice till tender.
- In a large pan, add in sugar, salt, cornstarch, lowfat milk, egg, and vanilla.
- Add in boiled rice to lowfat milk mix and boil till thick, stirring well.
- Put in casserole, put on meringue and bake 15 min in a 350 degree oven.
- For meringue, beat egg whites till stiff with sugar.
