Ingredients
- 1 small onion, chopped
- 2 Tbsp. margarine
- 1 cube chicken bouillon
- 1 c. shredded coconut
- 1 1/2 c. Minute rice
- 1 c. chopped walnuts
- 1/2 c. water
Method
- In large skillet, saute onions and butter until yellow.
- Add 1 1/2 cups water, bouillon cube and rice.
- Cook 20 minutes on low heat or until rice is cooked.
- Remove from heat and add coconut and nuts.
- This is great as a side dish or can be used as a stuffing for chicken.
