Ingredients

  • .92 lb. salt pork
  • 1 1/2 yellow onions
  • 4 fresh garlic cloves
  • 1 pkg. pork bones
  • 4 (28 oz.) cans Progresso peeled tomatoes
  • 4 (6 oz.) cans Progresso pure tomato paste
  • 1 bunch fresh parsley
  • 3/4 jar Spice Island sweet basil
  • 1 Tbsp. salt
  • 1 Tbsp. pepper

Method

  • Cut cube sizes of approximately .92 pounds of salt pork.
  • Fry in large saucepan eventually adding 1 1/2 chopped onions and 4 chopped garlic cloves.
  • Brown all.
  • Add pork bones and brown.
  • Add tomatoes (mush tomatoes before adding).
  • Cook on medium heat until it comes to a boil (approximately 20 minutes).
  • Add finely chopped parsley (leafy part only).
  • Add tomato paste and 72 ounces of water.
  • Add basil (.49 ounce jar).
  • Add palm full of salt and pepper (or to taste).
  • Simmer.
