Ingredients

  • 1 cup shortening or 1 cup margarine
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tablespoons vanilla
  • 1 12 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 3 cups chopped nuts
  • 3 cups quick oats
  • 1 cup raisins
  • 1 cup shredded coconut, well packed

Method

  • Preheat oven to 350 degrees.
  • Cream shortening or margarine and sugars.
  • Mix in eggs and vanilla.
  • Sift flour, salt, and soda, and fold into creamed mixture.
  • (I like to plump my raisins before adding them.
  • If you do, do not sift the flour.

  • Fold in oats, nuts, raisins, and coconut.
  • Drop by spoonful or scoop onto cookie sheet.
  • Bake for 8-10 minutes or until golden brown.
