Ingredients

  • 1/2 c. mayonnaise
  • 1/2 c. onion, chopped
  • 2 eggs
  • 1 stick butter
  • 2 1/2 c. broth from chicken
  • 1 pkg. stuffing mix
  • 2 eggs
  • 1 c. milk
  • 1 can cream of chicken soup
  • 1 fryer, cooked, boned and diced

Method

  • Mix together first three ingredients and set aside.
  • Then mix together next four ingredients and set aside.
  • Beat together the next two ingredients.
  • In 9 x 13-inch Pyrex dish, put a layer of stuffing mixture.
  • Top this with all of chicken, then top chicken with remaining stuffing mix.
  • Pour egg mix over top and let stand overnight in refrigerator.
  • Add cream of chicken soup on top of this and bake for 45 minutes at 350°.
