Ingredients

  • 1/2 to 1 lb. boneless chicken breast, cut into small pieces
  • 6 to 7 dried shiitake mushrooms, soaked in hot water to soften
  • 1 can bamboo shoots, sliced thinly into small pieces
  • 3/4 c. shoyu
  • 3/4 c. mushroom water (from the shiitake mushrooms)
  • 1/2 c. sugar (to taste)
  • 4 to 5 c. cooked rice
  • 1 Tbsp. oil (for frying)

Method

  • Saute chicken in oil.
  • Add thinly sliced mushrooms, bamboo shoots and the rest of the ingredients except the rice.
  • Bring to a boil, making sure there is still sauce remaining.
  • Mix with rice in large bowl.
