Ingredients
- 1/2 to 1 lb. boneless chicken breast, cut into small pieces
- 6 to 7 dried shiitake mushrooms, soaked in hot water to soften
- 1 can bamboo shoots, sliced thinly into small pieces
- 3/4 c. shoyu
- 3/4 c. mushroom water (from the shiitake mushrooms)
- 1/2 c. sugar (to taste)
- 4 to 5 c. cooked rice
- 1 Tbsp. oil (for frying)
Method
- Saute chicken in oil.
- Add thinly sliced mushrooms, bamboo shoots and the rest of the ingredients except the rice.
- Bring to a boil, making sure there is still sauce remaining.
- Mix with rice in large bowl.
