Ingredients

  • 5 egg yolks
  • 850 ml peanut oil
  • 150 ml olive oil
  • 50 ml walnut oil
  • 220 g mayonnaise
  • 300 g mustard
  • 30 g salt
  • 75 g sugar
  • 25 g pepper
  • 5 onions, finely chopped
  • 30 g garlic, finely chopped
  • 160 ml aceto balsamico
  • 175 ml red wine vinegar
  • 100 ml herb-flavored vinegar
  • 900 ml chicken broth (lukewarm)
  • 1 cup lovage, chopped
  • 1 cup basil, chopped

Method

  • Froth up the egg yolk and add carefully the peanut, olive and walnut oil.
  • Add all ingredients until the herb-flavored vinegar.
  • Add the chicken broth, lovage and basil and let it steep over night.
  • Pass dressing trough a sieve and whisk the dressing- ready!
