Ingredients
- 1 lb. black-eyed peas
- 3 qt. water
- 1/2 lb. salt pork
- 2 Tbsp. onion, chopped
- 1 Tbsp. jalapeno pepper, chopped
- 2 tsp. sugar
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
Method
- Wash peas thoroughly.
- In a large bowl, cover peas with 1 quart water.
- Cover; soak several hours.
- When peas are ready to cook, lightly brown pork in large heavy pot.
- Add 2 quarts water to pot.
- Drain peas; place in pot.
- Heat to boiling.
- Add remaining ingredients.
- Cover; simmer for 1 hour, or until peas are tender.
- Serves 6.
