Ingredients

  • 1 lb. black-eyed peas
  • 3 qt. water
  • 1/2 lb. salt pork
  • 2 Tbsp. onion, chopped
  • 1 Tbsp. jalapeno pepper, chopped
  • 2 tsp. sugar
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper

Method

  • Wash peas thoroughly.
  • In a large bowl, cover peas with 1 quart water.
  • Cover; soak several hours.
  • When peas are ready to cook, lightly brown pork in large heavy pot.
  • Add 2 quarts water to pot.
  • Drain peas; place in pot.
  • Heat to boiling.
  • Add remaining ingredients.
  • Cover; simmer for 1 hour, or until peas are tender.
  • Serves 6.
