Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 cup brown sugar, packed
  • 1/4 cup honey
  • 2 eggs
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 cups quick-cooking (not instant) oatmeal
  • 1 package (12 oz.) chocolate chips
  • 1 cup chopped walnuts or pecans
  • 1 teaspoon vanilla

Method

  • Combine butter, sugars, vanilla, and honey. Beat well to cream. Beat eggs in one at a time. Stir in flour, salt, and baking soda. Stir in oatmeal. Mix well. Stir in chocolate chips and nuts.
  • Drop by scant teaspoons on greased cookie sheets (or sheets lined with silpats). Bake in a preheated 350 degree oven for about 10 minutes.
  • Note: For the anti-nut, chocolate-obsessive version: eliminate the nuts; add equivalent in chocolate (though I have been known to double the amount of chocolate, that variation on the variation might be only for the truly chocolate-obsessed). As for the chocolate itself, you can use chocolate du choix --semisweet chips or chunks, any chocolate you like (chopped or cut in chunks), or any combination that suits you.
