Ingredients

  • 2 eggs
  • 2 Tbsp. milk
  • 1 tsp. salt
  • 1 1/2 c. all-purpose flour

Method

  • Beat eggs until foamy.
  • Mix in milk, salt and flour.
  • Knead dough in bowl to form a ball until very smooth, about 1 minute. Cover; let rest 30 minutes.
  • Divide dough into 2 parts.
  • Roll each part on floured surface.
  • Keep remaining dough covered until ready to roll.
  • Cut into long strips, about 3 inches wide.
  • Let stand about 15 minutes, then cut into narrow strips about 1/4-inch wide. Dry for at least 1 hour.
  • Cook in 3 quarts salted water (1 tablespoon salt) or in chicken broth.
  • Serves 4.
