Ingredients
- 2 eggs
- 2 Tbsp. milk
- 1 tsp. salt
- 1 1/2 c. all-purpose flour
Method
- Beat eggs until foamy.
- Mix in milk, salt and flour.
- Knead dough in bowl to form a ball until very smooth, about 1 minute. Cover; let rest 30 minutes.
- Divide dough into 2 parts.
- Roll each part on floured surface.
- Keep remaining dough covered until ready to roll.
- Cut into long strips, about 3 inches wide.
- Let stand about 15 minutes, then cut into narrow strips about 1/4-inch wide. Dry for at least 1 hour.
- Cook in 3 quarts salted water (1 tablespoon salt) or in chicken broth.
- Serves 4.
