Ingredients

  • 1 1/2 c. chopped potatoes
  • 1/2 c. water
  • 1/4 c. celery slices
  • 1/4 c. carrots
  • 1/8 c. chopped onion
  • chicken bouillon cube
  • 1/4 tsp. salt
  • dash of pepper
  • 3/4 c. milk
  • 1/4 lb. Velveeta cheese
  • 1 Tbsp. flour
  • 1 tsp. parsley flakes

Method

  • Combine potatoes, water, celery, carrots, onion, parsley, bouillon cube and seasoning.
  • Mix well. Cover and simmer 15 to 20 minutes.
  • Gradually add milk to flour, mixing until well blended. Add milk mixture to vegetables.
  • Cook until thick and add cheese. Stir until melted.
