Ingredients
- 2 1/2 cups self-rising flour
- 2 tbsp sugar
- 2 cups buttermilk
- 1 None large egg, lightly whisked
- None None Melted butter, to grease pan
- 4.5 oz goat cheese, cut into 12 slices
- None None Thyme, to garnish
Method
- Combine flour and sugar in a large bowl. Make a well at center. Pour buttermilk and egg into well, then stir to make a smooth batter. Season to taste.
- Preheat broiler to high. Brush a large frying pan with butter to grease and place over moderate heat. For each pancake, spoon 2 tablespoons of batter into pan. Cook 3 pancakes at a time for 1 minute each side or until golden brown and cooked. Transfer to a baking sheet. Repeat to make 12 pancakes in total, greasing pan with butter between batches.
- Top pancakes with cheese. Place under broiler and cook for 1 minute or until cheese melts slightly. Serve topped with thyme.
