Ingredients

  • 1 c. rice
  • 2 c. cold water
  • 1/4 tsp. salt
  • 1/2 tsp. oleo
  • 1 tsp. vanilla
  • raisins
  • 12 medium sized potatoes
  • 6 Tbsp. margarine
  • 8 oz. grated cheddar cheese
  • 1 1/2 c. milk
  • 3/4 tsp. salt (or less)
  • 2 beaten eggs

Method

  • Cook potatoes; drain and mash.
  • Heat margarine, cheese, milk and salt over low heat; add to mashed potatoes.
  • Fold in beaten eggs.
  • Put into greased 9 x 13 inch pan Refrigerate overnight or several hours.
  • Bake at 350° for 30 to 45
  • minutes.
