Ingredients

  • 4 medium sweet potatoes or 1 (16 oz.) can, drained
  • 1/4 c. brown sugar
  • 1/4 tsp. salt
  • 1/4 c. margarine, melted

Method

  • Wash potato skins but do not peel.
  • Boil 20 to 30 minutes or microwave 8 to 12 minutes and let stand 1 minute before removing from microwave.
  • After either method of cooking, remove skins and slice, cube or mash.
  • If using canned sweet potatoes, cooking is not necessary.
  • Heat oven to 350°.
  • Arrange potatoes in ungreased shallow baking dish.
  • Combine remaining ingredients; drizzle over potatoes.
  • Bake 20 to 30 minutes until glazed and thoroughly heated.
  • Garnish with mini marshmallows, coconut, peanuts or Macadamia nuts.
  • Makes 4 servings.
