Ingredients

  • 1/4 c. fresh lime juice
  • 2 tbsp. ketchup
  • 2 teaspoon extra virgin olive oil
  • 1 teaspoon chili pwdr
  • 1/2 teaspoon chopped garlic
  • 1/2 teaspoon cumin
  • 1/2 c. water
  • 2 teaspoon cornstarch
  • 4 boneless, skinless chicken breast halves

Method

  • Combine first 6 ingredients and blend well.
  • Combine water and cornstarch and blend well.
  • Stir into lime juice mix.
  • Cook over medium heat till mix thickens, stirring frequently.
  • Place chicken in 8x12 inch baking dish.
  • Add in marinade, turn to coat and marinate for 10 min.
  • Heat grill (Jennaire, gas or possibly charcoal).
  • Grill for 15 to 20 min, turning occasionally and brushing frequently with marinade.
  • Serves 4.
