Ingredients

  • cucumbers
  • 2 c. salt
  • 1 gal. water
  • alum (size of walnut)
  • 1 Tbsp. ginger
  • 1 pt. vinegar
  • 1 Tbsp. whole allspice
  • 1 pt. water
  • 1 Tbsp. celery seed

Method

  • Slice the cukes thin and cover with cold water in which the salt has been dissolved to 1 gallon of water. Soak 8 days. Drain and rinse in cold water.
  • Add the alum to cukes. Cover with water and boil 1/2 hour. Drain and cover with water. Add the ginger and boil 1/2 hour. Drain and add the remaining ingredients. Boil until clear, about 1/2 hour. Can.
