- 1 1/2 cups chopped onions
- 2 -3 tablespoons finely chopped fresh ginger
- 3 -4 garlic cloves, minced
- 4 (15 ounce) cans great northern beans, rinsed and drained
- 1/2 cup packed light brown sugar
- 1 (6 ounce) can tomato sauce
- 1/2 cup light molasses
- 1 teaspoon dry mustard
- 1 teaspoon ground ginger
- 1 teaspoon dried thyme
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon allspice
- 2 bay leaves
- pepper
- 1/2 cup coarsely ground gingersnap crumbs
Method
- Combine all ingredients except pepper and gingersnap crumbs in slow cooker. Season to taste with pepper.
- Cover and cook on low until thickened to desired consistency, about 6 hours, mixing in gingersnap crumbs during last hour.
- Discard bay leaves before serving.
