Ingredients

  • 6 slices bacon
  • 3/4 c. chopped onion
  • 1/4 c. chopped green onion tops
  • 2 Tbsp. flour
  • 2/3 c. cider vinegar
  • 1 1/3 c. water
  • 1/4 c. sugar
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 6 c. sliced, cooked and peeled potatoes

Method

  • In a large skillet, fry bacon until crisp; take out and set aside.
  • Drain
  • all but 3 tablespoons bacon drippings.
  • Add onions and
  • cook
  • until tender.
  • Stir in flour, blending well, and add vinegar
  • and
  • water.
  • Cook
  • and stir until bubbly and thickened. Add
  • sugar
  • and
  • stir
  • until
  • it
  • has
  • dissolved. Crumble bacon; gently toss with potatoes.
  • Add to skillet and stir to
  • coat potatoes.
  • Heat until potatoes are warm.
  • Serve immediately.
