Ingredients
- 6 slices bacon
- 3/4 c. chopped onion
- 1/4 c. chopped green onion tops
- 2 Tbsp. flour
- 2/3 c. cider vinegar
- 1 1/3 c. water
- 1/4 c. sugar
- 1 tsp. salt
- 1/4 tsp. black pepper
- 6 c. sliced, cooked and peeled potatoes
Method
- In a large skillet, fry bacon until crisp; take out and set aside.
- Drain
- all but 3 tablespoons bacon drippings.
- Add onions and
- cook
- until tender.
- Stir in flour, blending well, and add vinegar
- and
- water.
- Cook
- and stir until bubbly and thickened. Add
- sugar
- and
- stir
- until
- it
- has
- dissolved. Crumble bacon; gently toss with potatoes.
- Add to skillet and stir to
- coat potatoes.
- Heat until potatoes are warm.
- Serve immediately.
