Ingredients
- 1 lb. potatoes
- 4 strips bacon
- 1 small onion, chopped
- 1/2 green pepper, chopped
- 2 ribs celery, chopped
- 1/2 c. chopped parsley
- 2 Tbsp. flour
- 2 Tbsp. sugar
- 1 tsp. salt
- 1/4 tsp. dry mustard
- 1/4 tsp. pepper
- 1/3 c. cider vinegar
Method
- Boil potatoes in their skin until tender; drain, peel and slice or cube.
- Keep warm.
- Fry bacon until crisp; add onion and cook until soft.
- Stir in green pepper, celery and parsley; cook about 1 hour.
