Ingredients
- 2 lb. potatoes, cooked and diced
- 3/4 c. sugar
- 2 whole eggs, well beaten
- 1 Tbsp. mustard
- 1/3 c. vinegar
- salt and pepper to taste
- parsley flakes
- paprika
- 1/2 lb. bacon, cooked and crumbled
Method
- Combine sugar, eggs, mustard, vinegar, salt and pepper in saucepan and bring to boil whisking constantly so eggs blend well. Cook until thick, just 2 to 3 minutes.
- Pour over potatoes and sprinkle with parsley, bacon and paprika.
- Serve hot.
