Ingredients
- 1 1/2 lb. Swiss cheese, grated
- 1/2 c. flour
- 3/4 c. milk
- 4 Tbsp. butter or margarine
- 5 eggs, separated
- 1 unbaked pie shell or phyllo cups (mini size, approximately 50)
Method
- Melt butter; add flour.
- Add milk, stirring constantly, until thick and smooth.
- Over low heat, add egg yolks and slowly add grated cheese until melted.
- Remove from heat.
- Beat egg whites until stiff; fold in cheese mixture.
- Pour into unbaked pie shell and bake at 400° for 15 minutes, then turn down oven to 375° and bake until golden brown, about 25 minutes more, or until knife comes out clean.
