Ingredients

  • 1 1/2 lb. Swiss cheese, grated
  • 1/2 c. flour
  • 3/4 c. milk
  • 4 Tbsp. butter or margarine
  • 5 eggs, separated
  • 1 unbaked pie shell or phyllo cups (mini size, approximately 50)

Method

  • Melt butter; add flour.
  • Add milk, stirring constantly, until thick and smooth.
  • Over low heat, add egg yolks and slowly add grated cheese until melted.
  • Remove from heat.
  • Beat egg whites until stiff; fold in cheese mixture.
  • Pour into unbaked pie shell and bake at 400° for 15 minutes, then turn down oven to 375° and bake until golden brown, about 25 minutes more, or until knife comes out clean.
