- 1/2 c. shortening
- 1/4 c. sugar (white)
- 3/4 c. light brown sugar
- 1 whole egg
- 1 egg yolk (reserve white)
- 1/2 c. buttermilk
- 1/4 tsp. baking soda
- 1 1/2 c. flour
- 1 1/2 tsp. powdered cinnamon
- 1 tsp. vanilla
- 1 c. chopped pecans
Method
- Stir baking soda into buttermilk.
- Cream shortening.
- Add sugars.
- Cream together; beat in eggs.
- Alternately add buttermilk (with added soda) and flour.
- Add nuts, vanilla and cinnamon. Spread in greased oblong baking dish.
- Prepare topping.
- Place topping on batter before baking.
- Bake slowly in 300° oven until done.
- Cut into squares.
