- 1 clove garlic
- 2 tsp. salt
- 1/3 c. mushrooms, chopped
- 1 c. onions, chopped fine
- 1 1/4 c. green pepper, chopped fine
- 1 c. cucumber, chopped fine
- 1 c. celery, chopped fine
- 1 Tbsp. chopped parsley
- 1 tsp. black pepper
- 1 tsp. Worcestershire sauce
- 1/2 c. tarragon vinegar
- 3 c. tomato juice
- 1/4 to 1/2 tsp. Tabasco
- 3 Tbsp. olive oil
- 2 tsp. chives, chopped
Method
- Crush garlic in 1 teaspoon salt.
- Saute mushrooms in olive oil.
- Combine with remaining ingredients in stainless or glass bowl.
- Cover and chill at least 3 hours or overnight.
- Serve with garlic croutons, if desired.
