Ingredients

  • 1 clove garlic
  • 2 tsp. salt
  • 1/3 c. mushrooms, chopped
  • 1 c. onions, chopped fine
  • 1 1/4 c. green pepper, chopped fine
  • 1 c. cucumber, chopped fine
  • 1 c. celery, chopped fine
  • 1 Tbsp. chopped parsley
  • 1 tsp. black pepper
  • 1 tsp. Worcestershire sauce
  • 1/2 c. tarragon vinegar
  • 3 c. tomato juice
  • 1/4 to 1/2 tsp. Tabasco
  • 3 Tbsp. olive oil
  • 2 tsp. chives, chopped

Method

  • Crush garlic in 1 teaspoon salt.
  • Saute mushrooms in olive oil.
  • Combine with remaining ingredients in stainless or glass bowl.
  • Cover and chill at least 3 hours or overnight.
  • Serve with garlic croutons, if desired.
