- 10 ounces, weight Angel Hair Pasta, Cooked And Buttered
- 2 cups Broccoli Florets
- 1/2 cups Extra Virgin Olive Oil, Divided
- 2 cups Sliced Fresh Mushrooms
- 1 whole Small To Medium Red Bell Pepper, Chopped Into 1/2-inch Pieces
- 1 pound Medium Shrimp, Cooked & Peeled
- 4 cloves Garlic, Minced
- 1/2 cups Chopped Sweet Onion
- 1 teaspoon Lemon Zest
- Salt and Pepper, to taste
- 1/2 cups Freshly Grated Parmesan Cheese
- 6 ounces, weight Package Of Baby Spinach
Method
- Put the pasta on to cook.
- Meanwhile, stir-fry the broccoli in 1/4 cup of the olive oil for 5 minutes.
- Add the remaining oil, mushrooms, and red pepper.
- Stir-fry for 5 minutes more.
- Add the shrimp, garlic, onion, lemon zest, salt, and pepper.
- Stir-fry for 5 minutes.
- Add the buttered pasta.
- Toss well.
- Arrange some baby spinach on each plate and top with a portion of shrimp and pasta.
- Sprinkle with the Parmesan cheese, if desired.
- Cooks note: contrary to common belief, yes, you CAN serve seafood topped with cheese.
- This adds another flavor layer and adds to the presentation.
