Ingredients

  • 10 ounces, weight Angel Hair Pasta, Cooked And Buttered
  • 2 cups Broccoli Florets
  • 1/2 cups Extra Virgin Olive Oil, Divided
  • 2 cups Sliced Fresh Mushrooms
  • 1 whole Small To Medium Red Bell Pepper, Chopped Into 1/2-inch Pieces
  • 1 pound Medium Shrimp, Cooked & Peeled
  • 4 cloves Garlic, Minced
  • 1/2 cups Chopped Sweet Onion
  • 1 teaspoon Lemon Zest
  • Salt and Pepper, to taste
  • 1/2 cups Freshly Grated Parmesan Cheese
  • 6 ounces, weight Package Of Baby Spinach

Method

  • Put the pasta on to cook.
  • Meanwhile, stir-fry the broccoli in 1/4 cup of the olive oil for 5 minutes.
  • Add the remaining oil, mushrooms, and red pepper.
  • Stir-fry for 5 minutes more.
  • Add the shrimp, garlic, onion, lemon zest, salt, and pepper.
  • Stir-fry for 5 minutes.
  • Add the buttered pasta.
  • Toss well.
  • Arrange some baby spinach on each plate and top with a portion of shrimp and pasta.
  • Sprinkle with the Parmesan cheese, if desired.
  • Cooks note: contrary to common belief, yes, you CAN serve seafood topped with cheese.
  • This adds another flavor layer and adds to the presentation.
