Ingredients

  • 4 garlic cloves
  • 4 lb. baking potatoes, peeled and sliced
  • 1 1/2 t. salt
  • 1 T. olive oil
  • 1/2 c. butter
  • 1 c. milk
  • 1/2 t. pepper

Method

  • Place garlic on a square of aluminum foil; drizzle with oil, and wrap in foil.
  • Bake at 425 degrees for 30 min; remove from oven, and set aside.
  • Cook potatoes in boiling water to cover 15-20 min. or until tender; drain and transfer to a large mixing bowl. Add butter and remaining ingredients; beat at medium speed until fluffy.
  • Cut off pointed ends of garlic; squeeze pulp from garlic cloves, and stir into mashed potatoes.
  • Serves 8. Very good!
