Ingredients
- 4 garlic cloves
- 4 lb. baking potatoes, peeled and sliced
- 1 1/2 t. salt
- 1 T. olive oil
- 1/2 c. butter
- 1 c. milk
- 1/2 t. pepper
Method
- Place garlic on a square of aluminum foil; drizzle with oil, and wrap in foil.
- Bake at 425 degrees for 30 min; remove from oven, and set aside.
- Cook potatoes in boiling water to cover 15-20 min. or until tender; drain and transfer to a large mixing bowl. Add butter and remaining ingredients; beat at medium speed until fluffy.
- Cut off pointed ends of garlic; squeeze pulp from garlic cloves, and stir into mashed potatoes.
- Serves 8. Very good!
