Ingredients
- 2 cans chickpeas, rinsed and drained
- 1/2 c roasted red or ylw peppers
- 1/4 c sliced kalamata olives
- 1/3 c sliced cherry tomatoes
- chopped parsley, basil, mint, and scallions
- minced garlic clive
- juice of 1 lemon
- olive oil
- salt and pepper
Method
- combine all ingredients and mix well
