Ingredients

  • 1 tablespoon coriander seeds
  • 2 teaspoons cumin seeds
  • 1 tablespoon green or white cardamom pods
  • 1 (3-inch) cinnamon stick, crushed
  • 1/4 teaspoon whole black peppercorns

Method

  • Toast coriander and cumin seeds in a dry small heavy skillet over moderate heat, stirring occasionally, until fragrant, about 2 minutes.
  • Cool, then finely grind with remaining spices in an electric coffee/spice grinder or with a mortar and pestle.
