Ingredients

  • 1 tablespoon apricot jam
  • 1 lemon juiced
  • 1 teaspoon honey
  • 1 1/4 pounds purple grapes green and, halved
  • 1 mango destoned, peeled and cut into strips
  • 3 oranges peeled all pith removed, sliced
  • 1 baby pineapple peeled, quartered, core removed and cut into wedges
  • 2 bananas peeled and sliced
  • 1 pomegranate halved, seeds taken out
  • 1 pound vanilla ice cream thawed
  • 1 tablespoon ground ginger
  • 1 starfruit thinly sliced
  • mint leaves to decorate

Method

  • Warm the apricot jam in a pan with the lemon juice and honey. Leave to cool. Add all the fruit except for the starfruit and let stand for 15 mins.
  • Whisk the ice cream with the ginger and spoon into 6 shallow dessert bowls. Top with the fruit salad and decorate with starfruit and mint leaves.
