- 1 tablespoon apricot jam
- 1 lemon juiced
- 1 teaspoon honey
- 1 1/4 pounds purple grapes green and, halved
- 1 mango destoned, peeled and cut into strips
- 3 oranges peeled all pith removed, sliced
- 1 baby pineapple peeled, quartered, core removed and cut into wedges
- 2 bananas peeled and sliced
- 1 pomegranate halved, seeds taken out
- 1 pound vanilla ice cream thawed
- 1 tablespoon ground ginger
- 1 starfruit thinly sliced
- mint leaves to decorate
Method
- Warm the apricot jam in a pan with the lemon juice and honey. Leave to cool. Add all the fruit except for the starfruit and let stand for 15 mins.
- Whisk the ice cream with the ginger and spoon into 6 shallow dessert bowls. Top with the fruit salad and decorate with starfruit and mint leaves.
