Ingredients
- 1 1/2 c. low-fat cottage cheese
- 1 tsp. lemon juice
- 1/3 c. chopped pecans or walnuts
- 1/3 c. raisins
- 1/3 c. canned crushed pineapple, drained
Method
- Put cottage cheese and lemon juice in a blender until smooth. Add raisins and pineapple; blend just until fruit is finely chopped.
- Scrape mixture into a bowl.
- Stir in nuts.
- Cover and keep cold until serving.
- May be used on crackers, bread slices or sandwiches.
