Ingredients

  • 2 eggs, slightly beaten
  • 1/2 c. sugar
  • 1/8 tsp. salt
  • 1/2 c. pineapple juice
  • 1/4 c. lemon juice
  • 1/2 c. thinly sliced celery
  • 1/2 c. crushed pineapple, drained
  • 2 medium apples, diced
  • 1/2 c. English walnuts, broken
  • 1 c. whipping cream

Method

  • Combine first 5 ingredients.
  • Cook over low heat until thick. Let cool.
  • Add next 4 ingredients.
  • Gently fold in 1 cup cream, whipped.
  • Spoon into greased 8-inch square pan.
  • Freeze.
  • Cut into squares.
  • Serve on lettuce leaf.
