Ingredients

  • 1 cup raisins
  • 23 cup boiling water
  • 1 teaspoon instant coffee
  • 1 teaspoon cinnamon
  • 12 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 12 cups flour
  • 12 teaspoon baking soda
  • 12 teaspoon baking powder
  • 1 cup milk
  • 12 cup butter
  • 2 cups icing sugar
  • 2 tablespoons milk (or enough to make icing of spreading consistency)
  • 1 teaspoon vanilla
  • 12 cup chopped walnuts (or more, if you desire)

Method

  • Pour boiling water over raisins.
  • Sprinkle with instant coffee and cinnamon.
  • Let cool.
  • Meanwhile, mix all batter ingredients together.
  • Pour liquid off raisins and add liquid to batter.
  • Mix well.
  • Add raisins to batter.
  • Pour mixture into jelly roll pan and bake for 20 minutes at 320 degrees F.
  • Let cool.
  • Meanwhile, make icing: Cream butter.
  • Add icing sugar.
  • Add milk, a little at a time, and blend well.
  • Blend in vanilla.
  • When cake is cool, frost with icing.
  • Sprinkle with chopped walnuts.
  • Cut into squares.
