Ingredients

  • 1 c. boiling water
  • 1 pkg. lime flavored gelatin
  • 1 (No. 2) can crushed pineapple (undrained)
  • 1 c. cottage cheese
  • 1/2 c. diced celery
  • 1 Tbsp. pimiento
  • 1/2 c. chopped walnuts
  • 1 (3 oz.) pkg. cream cheese
  • 1 Tbsp. mayonnaise
  • 1 Tbsp. lemon juice
  • walnut halves

Method

  • Pour boiling water over gelatin; stir until dissolved. Chill.
  • Add pineapple, cottage cheese, celery, pimiento and walnuts.
  • Pour into 8 x 8 x 2-inch pan.
  • Chill until firm.
  • Frost with combined cream cheese, mayonnaise and lemon juice.
  • Cut into squares; arrange on salad greens.
  • Garnish with walnut halves.
