Ingredients

  • 2/3 c. sugar
  • 1/2 c. low-fat sour cream
  • 2 Tbsp. margarine, softened
  • 2 egg whites or 1/4 c. cholesterol-free egg product
  • 3/4 c. mashed, very ripe bananas (2 medium size ones)
  • 1 tsp. vanilla
  • 1 c. all-purpose flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 2 Tbsp. finely chopped walnuts

Method

  • Heat oven to 375°.
  • Spray square 9 x 9 x 2-inch pan with nonstick cooking spray.
  • Beat sugar, sour cream, margarine and egg whites in large bowl on low speed for 1 minute, scraping bowl occasionally.
  • Beat in bananas and vanilla on low speed 30 seconds.
  • Beat in flour, salt and baking soda on medium speed for 1 minute, scraping bowl occasionally.
  • Stir in nuts.
