- 1 large can (29 oz.) candied yams
- 1/2 c. light brown sugar
- 1/2 stick melted margarine
- 1 tsp. vanilla
- 1 tsp. pumpkin pie spice
- 1 egg
- 1/4 c. evaporated milk
- 1 tsp. ginger
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- small can crushed pineapple (optional)
- 1/2 c. chopped nuts
Method
- Drain and mash candied yams in baking dish.
- Add remaining ingredients and mix well by hand.
- Bake in 350° oven for about 30 to 35 minutes or until mixture is firm.
- Remove from oven and place topping on casserole.
