Ingredients

  • 1 large green tomato
  • 1 medium yellow onion
  • 1/2 tsp salt
  • 1/2 tsp gresh ground black pepper
  • 2 1/2 tbsp olive oil, extra virgin
  • 1 cup grated parmesan cheese
  • 2 oz mozzarella cheese
  • 2 large eggs
  • 1 tbsp water
  • 1/4 tsp cilantro

Method

  • Take a six pack muffin pan.
  • Spray with nonstick.
  • Preheat oven 425 Fahrenheit.
  • Take the green tomato wash and slice it.
  • In a pan heat the oil.
  • Chop your onion.
  • Add tomato to the hot oil and fry add salt and pepper.
  • When soften add onions and stir well.
  • Now let the onions get tender.
  • Let it cool.
  • Take the parmesan cheese and form around the sides and bottom with the cheese.
  • Take a little bit of mozzarella cheese on bottom of each muffin bottom.
  • On top of the parmesan cheese.
  • Take and fill the muffin holes with the tomato and onion mixture.
  • Beat you eggs with water,.
  • Finish filling up the holes with egg mixture top with hand shredded mozzarella cheese.
  • Bake 15-20 minutes till done.
  • Take out the muffin pans garnish wit cilantro serve hope you enjoy.
