Ingredients
- 6 medium chicken breast halves, skinned (2 1/4 lb. total)
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. paprika
- 1/8 to 1/4 tsp. pepper
- 2 Tbsp. cooking oil
- 1/2 c. evaporated skim milk
- 1/2 c. chicken broth
Method
- Rinse chicken pieces; pat dry with paper towels.
- In a plastic bag combine flour, salt, paprika and pepper.
- Add a few chicken breasts at a time to the bag.
- Shake to coat.
- Remove chicken from bag, shaking of any excess coating in the bag.
- Reserve remaining flour mixture.
