Ingredients

  • 6 medium chicken breast halves, skinned (2 1/4 lb. total)
  • 1/4 c. all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. paprika
  • 1/8 to 1/4 tsp. pepper
  • 2 Tbsp. cooking oil
  • 1/2 c. evaporated skim milk
  • 1/2 c. chicken broth

Method

  • Rinse chicken pieces; pat dry with paper towels.
  • In a plastic bag combine flour, salt, paprika and pepper.
  • Add a few chicken breasts at a time to the bag.
  • Shake to coat.
  • Remove chicken from bag, shaking of any excess coating in the bag.
  • Reserve remaining flour mixture.
