Ingredients

  • 1/4 c. butter or margarine
  • 1/2 c. chopped onion
  • 1/4 c. all-purpose flour
  • 1 c. water
  • 6 medium tomatoes, peeled and coarsely chopped
  • 1 Tbsp. minced fresh parsley
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. dried thyme
  • 1/4 tsp. pepper
  • 1 bay leaf

Method

  • Melt butter in large heavy boiler.
  • Saute onion in butter for 4 minutes.
  • Reduce to low heat.
  • Add flour and stir until smooth. Gradually add water.
  • Cook over low heat, stirring constantly, until thick and bubbly.
  • Add the next 7 ingredients.
  • Bring to a boil.
  • Cover and simmer on low heat for 30 to 40 minutes.
  • Remove and discard bay leaf.
