Ingredients
- 1/4 c. butter or margarine
- 1/2 c. chopped onion
- 1/4 c. all-purpose flour
- 1 c. water
- 6 medium tomatoes, peeled and coarsely chopped
- 1 Tbsp. minced fresh parsley
- 1 Tbsp. sugar
- 1 tsp. salt
- 1/2 tsp. dried thyme
- 1/4 tsp. pepper
- 1 bay leaf
Method
- Melt butter in large heavy boiler.
- Saute onion in butter for 4 minutes.
- Reduce to low heat.
- Add flour and stir until smooth. Gradually add water.
- Cook over low heat, stirring constantly, until thick and bubbly.
- Add the next 7 ingredients.
- Bring to a boil.
- Cover and simmer on low heat for 30 to 40 minutes.
- Remove and discard bay leaf.
