Ingredients

  • 2 envelopes unflavored gelatin
  • 2 c. cold water, divided
  • 2 chicken bouillon cubes
  • 1 c. tomato juice
  • 2 Tbsp. lemon juice
  • 2 Tbsp. dill weed
  • 1 tsp. salt
  • 1/2 tsp. hot sauce
  • 1/4 c. chopped green onion
  • 2 c. peeled and chopped fresh tomatoes
  • 1 c. peeled, seeded and chopped cucumbers
  • lettuce (optional)

Method

  • Soften gelatin in 1 cup cold water; add bouillon cubes. Place over
  • low
  • heat, stirring constantly, until gelatin and bouillon cubes dissolve.
  • Remove from heat and add remaining 1 cup
  • water, tomato
  • juice,
  • lemon juice, dill weed, salt, hot sauce and green onion. Chill gelatin mixture until consistency of unbeaten egg white.
