- 2 envelopes unflavored gelatin
- 2 c. cold water, divided
- 2 chicken bouillon cubes
- 1 c. tomato juice
- 2 Tbsp. lemon juice
- 2 Tbsp. dill weed
- 1 tsp. salt
- 1/2 tsp. hot sauce
- 1/4 c. chopped green onion
- 2 c. peeled and chopped fresh tomatoes
- 1 c. peeled, seeded and chopped cucumbers
- lettuce (optional)
Method
- Soften gelatin in 1 cup cold water; add bouillon cubes. Place over
- low
- heat, stirring constantly, until gelatin and bouillon cubes dissolve.
- Remove from heat and add remaining 1 cup
- water, tomato
- juice,
- lemon juice, dill weed, salt, hot sauce and green onion. Chill gelatin mixture until consistency of unbeaten egg white.
