Ingredients
- 1 medium eggplant
- 1 minced garlic clove
- 3 Tbsp. olive oil
- 1 c. crushed tomatoes
- 1/4 c. slivered basil
- 5 oz. cubed Mozzarella
- 1/2 c. cooked rigatoni
Method
- Saute the eggplant (cubed) with minced garlic in olive oil. Stir in the tomatoes and simmer for 10 minutes.
- Toss with basil, cubed Mozzarella and rigatoni.
