Ingredients
- 1 qt. strawberries, cleaned and halved
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1 (9-inch) baked pie shell
- 2 Tbsp. lemon juice
- red food coloring (optional)
- water
- whipped topping or ice cream
Method
- Place strawberries in bowl.
- Sprinkle sugar over berries. Berries should marinate 3 to 4 hours.
- Drain juice into top of double boiler.
- Add enough water to make 2 cups liquid.
- Blend cornstarch with 1/4 cup of liquid.
- Blend into juice.
- Cook until thick, stirring constantly.
- Cool.
- Add lemon juice and food coloring.
- Fold in strawberries.
- Spoon into pie shell.
- Chill abut 1 hour.
- Top with whipped topping or ice cream.
- Yields 6 large servings.
