Ingredients

  • 1 qt. strawberries, cleaned and halved
  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • 1 (9-inch) baked pie shell
  • 2 Tbsp. lemon juice
  • red food coloring (optional)
  • water
  • whipped topping or ice cream

Method

  • Place strawberries in bowl.
  • Sprinkle sugar over berries. Berries should marinate 3 to 4 hours.
  • Drain juice into top of double boiler.
  • Add enough water to make 2 cups liquid.
  • Blend cornstarch with 1/4 cup of liquid.
  • Blend into juice.
  • Cook until thick, stirring constantly.
  • Cool.
  • Add lemon juice and food coloring.
  • Fold in strawberries.
  • Spoon into pie shell.
  • Chill abut 1 hour.
  • Top with whipped topping or ice cream.
  • Yields 6 large servings.
