Ingredients

  • 1 bag Fresh Spinach (10 - 12 Oz. Bag)
  • 1 whole Onion, Roughly Chopped
  • 3 cloves Garlic
  • 3 Tablespoons Flour
  • 3 Tablespoons Olive Oil
  • 1 cup Milk Or Light Cream
  • 1/2 teaspoons Salt, Or To Taste
  • 1/2 teaspoons Nutmeg

Method

  • Wash spinach and steam together with the onion for 5 to 10 minutes.
  • Finely chop cooked spinach and onion together with the garlic and place in a medium pot.
  • Combine flour and oil and and heat in a small sauce pan
  • until golden brown.
  • Combine flour mixture with spinach, stirring until evenly blended.
  • Add 1/2 cup of the milk to the spinach, stirring to combine with the flour mixture.
  • Bring to a boil over medium heat, then reduce heat and simmer for 30 minutes or until spinach thickens. Adjust the thickness to your liking by adding the remaining 1/2 cup of milk. Salt to taste.
  • After serving dust with a little bit of nutmeg.
