Ingredients
- 1 bag Fresh Spinach (10 - 12 Oz. Bag)
- 1 whole Onion, Roughly Chopped
- 3 cloves Garlic
- 3 Tablespoons Flour
- 3 Tablespoons Olive Oil
- 1 cup Milk Or Light Cream
- 1/2 teaspoons Salt, Or To Taste
- 1/2 teaspoons Nutmeg
Method
- Wash spinach and steam together with the onion for 5 to 10 minutes.
- Finely chop cooked spinach and onion together with the garlic and place in a medium pot.
- Combine flour and oil and and heat in a small sauce pan
- until golden brown.
- Combine flour mixture with spinach, stirring until evenly blended.
- Add 1/2 cup of the milk to the spinach, stirring to combine with the flour mixture.
- Bring to a boil over medium heat, then reduce heat and simmer for 30 minutes or until spinach thickens. Adjust the thickness to your liking by adding the remaining 1/2 cup of milk. Salt to taste.
- After serving dust with a little bit of nutmeg.
