Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs (lightly beaten)
  • 1 1/2 cups milk
  • 2 tablespoons vegetable oil
  • 1 pineapple (cored and cut into 3/4-inch slices, then in quarters.)
  • oil, for frying

Method

  • Sift the flour together with the baking powder and salt.
  • Combine the eggs with milk and 2 tablespoons of vegetable oil.
  • Stir into the dry ingredients.
  • Dip pineapple quarters into batter and drop pieces in oil, frying at 375F until golden brown.
