Ingredients

  • 1 (9-inch) baked pie shell, cooled
  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • 1 c. water
  • 4 Tbsp. dry peach gelatin
  • 1/2 c. sugar
  • 1 (8 oz.) softened cream cheese
  • 4 to 5 sliced fresh berries
  • 1 small Cool Whip

Method

  • Mix first 3 ingredients in a saucepan.
  • Boil until thick and clear, then add the 4 tablespoons of peach gelatin.
  • Let cool. Meanwhile, mix together the 1/2 cup sugar and cream cheese.
  • Cream together until smooth and spread in bottom of cooled pie crust. Combine the cooled gelatin mixture and the sliced peaches.
  • Place on top of the cream cheese mixture in pie crust.
  • Cover with Cool Whip and refrigerate for a few hours before serving.
