Ingredients
- 1 (9-inch) baked pie shell, cooled
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1 c. water
- 4 Tbsp. dry peach gelatin
- 1/2 c. sugar
- 1 (8 oz.) softened cream cheese
- 4 to 5 sliced fresh berries
- 1 small Cool Whip
Method
- Mix first 3 ingredients in a saucepan.
- Boil until thick and clear, then add the 4 tablespoons of peach gelatin.
- Let cool. Meanwhile, mix together the 1/2 cup sugar and cream cheese.
- Cream together until smooth and spread in bottom of cooled pie crust. Combine the cooled gelatin mixture and the sliced peaches.
- Place on top of the cream cheese mixture in pie crust.
- Cover with Cool Whip and refrigerate for a few hours before serving.
