Ingredients

  • 1 small orange, unpeeled, sliced
  • 2 cups orange juice
  • scant 2 cups sugar
  • 2 tbsp plus 2 tsp fresh lemon juice
  • 2 12-ounce bags cranberries

Method

  • 1. Finely grind orange in processor. (Or chop orange finely.)
  • 2. Combine orange juice, sugar, and lemon juice in large saucepan.
  • 3. Bring to boil, stirring until sugar dissolves.
  • 4. Reduce heat and simmer 5 minutes.
  • 5. Add ground orange and cranberries and cook until berries begin to pop,
  • stirring occasionally, about 8 minutes.
  • 6. Remove from heat and cool completely.
  • 7. Refrigerate. Serve cold.
  • Can be prepared up to 4 days ahead.
