Ingredients
- 1 bag Fresh Baby Arugula, 10-12 Ounce
- 1 can (15 Oz. Size) Beans, Rinsed And Drained
- 1 whole Lemon
- 1 whole Block Of Parmesan Cheese, Shaved Into Thin Slices, Use As Much As You Want
- 1 Tablespoon Extra Virgin Olive Oil (more If Needed)
- Cracked Black Pepper, To Taste
Method
- Clean your arugula in a salad spinner. Put it into a serving bowl.
- Add rinsed and drained cannellini beans.
- Top with shaved Parmesan cheese and squeeze the juice of 1/2 or a whole lemon over the top, depending on the size of your salad.
- Drizzle with olive oil and grind black pepper on top. What could be easier? It's simple and refreshingly good.
