Ingredients

  • 4 1/2 c. raw apples, chopped
  • lemon juice
  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 2 large eggs
  • 2 1/2 c. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. vanilla
  • 1 1/2 c. pecans, chopped

Method

  • Prepare apples.
  • Put a little lemon juice over them; set aside and cover.
  • Add sugar and
  • eggs
  • to
  • oil; mix well at low speed until creamy and
  • smooth.
  • Sift
  • flour and measure.
  • Sift again with salt, soda and
  • baking powder.
  • Add flour mixture to creamed mixture a little at
  • time.
  • Fold
  • in well after each addition; add vanilla.
  • When
  • batter
  • is stiff, remove beaters and finish mixing by hand.
  • Fold in apples and nuts.
  • Bake in a 9 x 13-inch pan for 55 minutes to 1 hour at 350°.
