Ingredients
- 4 1/2 c. raw apples, chopped
- lemon juice
- 1 1/2 c. salad oil
- 2 c. sugar
- 2 large eggs
- 2 1/2 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. vanilla
- 1 1/2 c. pecans, chopped
Method
- Prepare apples.
- Put a little lemon juice over them; set aside and cover.
- Add sugar and
- eggs
- to
- oil; mix well at low speed until creamy and
- smooth.
- Sift
- flour and measure.
- Sift again with salt, soda and
- baking powder.
- Add flour mixture to creamed mixture a little at
- time.
- Fold
- in well after each addition; add vanilla.
- When
- batter
- is stiff, remove beaters and finish mixing by hand.
- Fold in apples and nuts.
- Bake in a 9 x 13-inch pan for 55 minutes to 1 hour at 350°.
